Yummy...Chicken Salad

Just a simple chicken salad recipe I created one day and the kids loved it (always a good thing when kids love something). Oldest son has been asking for this lately so today was the day.

5 cups cooked diced chicken
¼ cup diced onion
¼ cup diced celery
¼ cup diced walnut pieces
1 cup mayo
1 tsp lemon pepper
1/2 tsp salt

Simply mix all ingredients together and serve your favorite way. My favorite is on a croissant but I didnt have any on this day.

Today's harvest......

Aren't these the cutest little eggplants. They are about the size of a golf ball. The eggplant plant shows signs of many, many more eggplants to come. Plenty of okra still coming from the garden, not enough to fill our tummies, just enough to make us wish for more.

We have spirit..... yes we do!!!!

My darling daughter wants to know why I don't have a picture of her on my blog. Well now I do.

This was the first home JV game of the season. The weather was pretty bad. A dust storm rolled in and the cheerleaders were facing directly towards the oncoming dust. They had to squint their eyes and as they chanted and cheered they got a mouthful of dust.

Hence this very glamorous picture. Do you think my other two kids will have the nerve to ask me to post their pics after they see this pic of their sis? I think not!

Okra? Orca? Who cares... It's good stuff!

This is my first attempt at growing okra. I started from seed very early in the season, probably February or March. For the longest time the plants were just spindling looking things. Late in the summer, when things really got HOT, the plants took off like crazy, and just a few weeks ago started producing okra, yum yum!

Darling daughter continuosly calls these Orca. I don't care what she calls them as long as they are on their way to our tummies. Our favorite way to eat okra?????? well fried of course, what could be tastier than that!
Lessons learned.... grow more plants next year so that I can freeze some okra, and make sure the plants are in a sunnier location.

And the 2008 Football Season Begins

First scrimmage game August 28th. Unfortunately the game didn't last long because of a storm that moved in too close.

Storm rolling in.

I wish I could have caught the amount of lightening in the sky. It was amazing! And scary! And probably not wise to be sitting on metal bleachers with the lightening moving closer.
